I find a few sources that say she is Sophie Simmons.

Some of those sources link it to the daughter of Shannon Tweed and Gene Simmons who has that name, but that is obviously not the case. They don't look anything alike.
I'm not convinced. She could be another girl with that same name. This doesn't look like a professional shoot to me. My guess is that there are no other photos and we will never know her name.
